So, after seeing this recipe on JenLovesKev, paired with my dedication to become more adept in the kitchen, I decided to make a big fancy meal on Saturday night featuring Homemade Veggie Burgers with Sweet Potato Fries.
This required a lot of prep – lots of chopping, and cooking the beans and rice delayed the process even further. There are loads of ingredients, but I think they were all worth it. Also, who the heck knows where to find potato starch?! But after 2 hours and some change, these were finished, and DELICIOUS. Try it with nutty hummus or mayonnaise with crushed garlic. And it was even better the second day!
